Rise Brewery's of the island of Ærø go back to 1883 with one of Denmark's first dairies was build: Rise Mejeri. In 1920 dairy products were replaced by a brewery lead by Rasmus Pedesen Rasmussen. The beer brewed was branded as "Prima Lyst Hvidtøl" (a Danish type of household beer,low fermented and of medium gravity). In 1950 the production of flavored sparkling water was started alongside the beer. The brewery closed in the mid-1960s and the buildings were used for storage of the Ceres brewery's strong beers. Having been in the Rasmussen family for many generations, Ærø's brewery was been acquired by Christopher Seidenfaden in 2004 with the aim of resurrecting the brewing heritage of the old Rise brewery. The project of the new brewery has started in 2005. When opening in 2006 Rise brewery wants to offer some special new local beers - from organic products sourced on Ærø and the nearby islands. The projected brewery's capacity will be up to 200 hl per annum, part of which will be destined for export outside Denmark. Ærø island is tucked away in Denmark's South Sea. The only way to get there is by boat, which makes it an inconveniently distant place for an easy weekend from Copenhagen.
